This mouthwatering good Fresh Salsa Recipe is one of my favorites. You can have this beauty prepared in about five minutes. It is perfect with chips, quesadillas, burritos and tacos. You can spoon over quiche, scrambled eggs, omelettes and frittatas. You can slow cook it with chicken, beef or pork. The many uses of salsa when it comes to recipes and cooking are unlimited.
How to make fresh salsa
Simply add your cilantro, red onion, garlic and jalapenos to a food processor with chopping blade attached. Pulse a couple of times until everything is finely chopped. Add tomatoes, lime juice, cumin, paprika, cayenne pepper, salt and pepper and pulse a few more time until desired texture is reached. Store in covered container in the fridge.
How long does it last?
To keep fresh salsa at its best and prolong its shelf life be sure to store in an airtight container in the refrigerator. Homemade salsa will keep for about 5-7 days. If it smells bad or develops mold discard the salsa. Salsa can be frozen and will maintain quality for about 6-8 weeks.
What are the best tomatoes to use?
Any tomato that is vine ripened, meaty and tasty makes a good Salsa Recipe tomato. Romas are always a good bet and if the tomatoes that you purchase seem a little too juicy cut them in half horizontally and scoop out some of the seeds and juice before chopping. This Salsa Recipe was made with Muir Glen fire roasted diced tomatoes simply because I could not find any really good ripe meaty tomatoes. My neighbor has been tossing a few my way here and there but I have been gobbling them up as fast as I get them.

Fresh Salsa Recipe
Ingredients
- 1 small bunch of cilantro with most of the stems removed about 1/2 cup
- 1/2 of a red onion quartered
- 2 cloves of garlic
- 1 jalapeno stem removed
- 1 can 28 ounce fire roasted diced tomatoes
- 1 lime juiced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1 pinch cayenne
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Combine cilantro, red onion, garlic and jalapeno in food processor fit with the chopping blade. Pulse several times until finely chopped.
- Add tomatoes, lime juice, cumin, paprika, cayenne, salt and pepper. Pulse several more times until desired consistency.
Notes
If you like mild salsa remove the seeds from the jalapeno.
