I have been making pork steaks for years. They were a regional dish here long before anyone knew what they were. I love to serve them with ranch potatoes and sauteed asparagus.
Ingredient Notes and Substitutions
- Pork steaks: bone-in. If unavailable in your area, ask your butcher to cut you some. They are cut from the pork shoulder.
- Ginger: fresh or ginger paste
- Pineapple juice: you can substitute orange, apple, or mango juice. The flavor will be slightly altered, but it will still be delicious.
- Sambal Oelek: ground fresh chili paste. You can find it in the Asian food section of your local grocery store. Store it in the fridge for up to a month or freeze it in ice cube trays for recipe-sized portions.
How To Cook Pork Steak
Brown the pork steaks on the grill or in a cast iron skillet with a bit of oil. Put the pork steaks in a single layer in a large pan. Whisk the honey, Worcestershire sauce, soy sauce, ginger, ketchup, pineapple juice, and chili sauce. Baste the pork chops with a third of the sauce. Cover and bake for 45 minutes, then baste again, cover and cook for another 45 minutes, and baste one more time, cover and cook until tender.
Preparation Tips
- Pork steaks are cut from the shoulder and are best cooked for 1 1/2-2 hours at a low temperature to tenderize.
- Baste the pork steaks several times. This will help tenderize them and seal the flavor.
- Sear the meat on the grill or in a cast iron skillet on the stovetop. It adds flavor and caramelization to the final dish.
Recipe Variations
- Skip the sauce ingredients and use your favorite BBQ sauce.
- Add half a beer to the pan while cooking in the oven.
- Add more chili sauce, cayenne pepper, or a couple of teaspoons of sriracha for more heat.
Storage and Reheat
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave at reduced power for short 30-60 second intervals until warm.
