I love to serve this side dish with grilled chicken, baked meatloaf, and Italian Beef Sandwiches. The combination makes an effortless and speedy weekend lunch or weeknight dinner. Or break out that air fryer and make a batch of air-fried wedges for Sunday breakfast along with crispy bacon and eggs over easy. Or make a batch for gameday or movie night and dip them in my comeback sauce, boom boom sauce, honey mustard sauce, or ketchup!
How to make Air Fryer Potato Wedges
Start by washing and cutting your potatoes into wedges. Then combine them in a large bowl and toss with the oil, spices, and dried herbs. Then, preheat the air fryer for about 3 minutes. Next, arrange them in a single layer in an air fryer basket and cook for about 15-20 minutes or until golden brown and cooked through. Shake the basket every 5 minutes to keep the potatoes from sticking. Then remove the potatoes from the air fryer and sprinkle with parsley and freshly grated Parmesan cheese.

How to cut potatoes into wedges
Start by cutting the potatoes in half lengthwise. Then, cut each of those halves in half, making potato quarters. Then, if you are working with fairly large potatoes, cut those sections in half again. Work with a good, sturdy cutting board and a sharp knife.
Storage and Reheat
Store leftovers in an airtight container in the fridge for up to 3 days. To restore their crunchy texture, reheat in the air fryer at 375 degrees for 2-3 minutes. Or, in the oven at 375 degrees on a baking sheet until warm. Cover the potato wedges with aluminum foil, removing it the last couple of minutes to crisp up the wedges.
To freeze baked potato wedges, cool them completely, then store them in a freezer bag, remove as much air as possible, and freeze them for up to 3 months. Reheat from frozen in the air fryer at 375 until warm or in the oven at 375 degrees on a baking sheet until warm. Cover the potato wedges with aluminum foil, removing it the last couple of minutes to crisp up the wedges.
