These crisp Air Fryer Potato Wedges are so easy and quick to make with spices that you probably already have in your pantry. This recipe is always a dependable hit for those weeknights when time and energy are scarce. The air fryer cooks them perfectly tender on the inside and crispy brown on the outside.
Easy Air-Fried Potato Wedges
I love to serve this side dish with grilled chicken, baked meatloaf, and Italian Beef Sandwiches. The combination makes an effortless and speedy weekend lunch or weeknight dinner. Or break out that air fryer and make a batch of air-fried wedges for Sunday breakfast along with crispy bacon and eggs over easy. Or make a batch for gameday or movie night and dip them in my comeback sauce, boom boom sauce, honey mustard sauce, or ketchup!
How to make Air Fryer Potato Wedges
Start by washing and cutting your potatoes into wedges. Then combine them in a large bowl and toss with the oil, spices, and dried herbs. Then, preheat the air fryer for about 3 minutes. Next, arrange them in a single layer in an air fryer basket and cook for about 15-20 minutes or until golden brown and cooked through. Shake the basket every 5 minutes to keep the potatoes from sticking. Then remove the potatoes from the air fryer and sprinkle with parsley and freshly grated Parmesan cheese.
Recipe tips
- Dry the cut wedges well before combining them with the oil and other ingredients.
- Preheat the air fryer for 2-3 minutes.
- Russet or Yukon Gold potatoes are my go-to potatoes for this recipe.
- Air-fryer temperatures vary, so keep an eye on the potatoes and cook until golden brown and cooked through.
- There is no need to turn the potatoes. Give the air fryer basket a shake several times during the cooking process to keep the wedges from sticking.
- This recipe works well as a side or an appetizer. For an over-the-top delicious appetizer, serve with a variety of dipping sauces.
- If you don’t own an air fryer, you can bake these tasty potatoes in the oven at 400 degrees.
- For extra crispy wedges, soak the potato wedges in a large bowl of cold water for 30 minutes to remove some of the starch. After draining, pat them dry with paper towels.
Let’s talk spices for Air-Fried Potato Wedges
The seasonings and spices in this recipe are mild yet tasty, producing a flavor that is most pleasant to the average Joe. However, if you like to kick things up, try Cajun seasoning, chili powder, seasoned salt, or a dash of ground cayenne pepper.
Garnish with chopped fresh parsley, thyme, or rosemary for a fresh herb taste. Or use dried herbs like marjoram and oregano. For optimal flavor, add fresh and dried herbs after air frying.
How to cut potatoes into wedges
Start by cutting the potatoes in half lengthwise. Then, cut each of those halves in half, making potato quarters. Then, if you are working with fairly large potatoes, cut those sections in half again. Work with a good, sturdy cutting board and a sharp knife.
Storage and Reheat
Store leftovers in an airtight container in the fridge for up to 3 days. To restore their crunchy texture, reheat in the air fryer at 375 degrees for 2-3 minutes. Or, in the oven at 375 degrees on a baking sheet until warm. Cover the potato wedges with aluminum foil, removing it the last couple of minutes to crisp up the wedges.
To freeze baked potato wedges, cool them completely, then store them in a freezer bag, remove as much air as possible, and freeze them for up to 3 months. Reheat from frozen in the air fryer at 375 until warm or in the oven at 375 degrees on a baking sheet until warm. Cover the potato wedges with aluminum foil, removing it the last couple of minutes to crisp up the wedges.

Goodness, these look heavenly! I notice you said you use Yukon Gold and Russet potatoes, do you think it would work with sweet potatoes? I know they’re almost completely different, but I want to try all kinds of versions of this recipe.
