Delicious homemade apple fritter bread with chunks of fresh apples and cinnamon sugar, all drizzled with a vanilla cinnamon glaze. This is one of our favorite quick breads, and it disappears in the blink of an eye.
I have always had a fondness for quick breads. They are easy to make, always delicious, and no-fuss recipes that the whole family can get behind. If you like this recipe, try chocolate chip banana bread, lemon zucchini bread, or blueberry bread.
Ingredient Notes and Substitutions
See the complete list of ingredients below on the recipe card.
- Butter: unsalted. If using salted butter, reduce the added salt to 1/4 teaspoon
- Eggs: large ones at room temperature
- Apples: my favorites are Honeycrisp, Braeburn, Pink Lady, Gala, and Granny Smith.
- Vanilla extract: use the pure stuff.
How to Make Apple Fritter Bread
This is the summary version; see the recipe card below for the complete list of ingredients and the instructions.
Whisk the flour, baking powder, and salt in a medium bowl. In a separate bowl, combine the apples, brown sugar, and cinnamon.
In a small bowl, combine the brown sugar and cinnamon. Cream the butter and granulated sugar in a large bowl using a mixer. Stir in the eggs and the vanilla extract. Now stir in the flour mixture and milk, alternating between the two.
Spread half the bread batter into a well-greased loaf pan. Top with half the apple mixture and half of the cinnamon sugar. Spread the remainder of the bread batter in the pan and top with the remainder of the apple mixture and cinnamon sugar.
Bake for 60-70 minutes or until a toothpick inserted in the top comes out clean or with a few moist crumbs. There should be no wet batter. Whisk the vanilla cinnamon glaze ingredients and drizzle over the thoroughly cooled bread.
Preparation Tips and Storage
- Grease the loaf pan well. The bread tends to get sticky with the cinnamon sugar. I grease it with shortening and then with butter.
- Cream the butter and sugar for the bread batter with a mixer. Then, switch to a wooden spoon for the remaining ingredients.
- Peel the apples and chop them small but not so small that they disappear.
- Cool the bread on a cooling rack before drizzling with the glaze or slicing the bread.
- Store the bread wrapped in plastic or in an airtight container on the counter for up to 2 days. Because of the amount of apples in the recipe, transfer the bread to the fridge after 2 days for an additional 2 days.
Frequently Asked Questions
Store the bread wrapped in plastic or an airtight container on the counter for up to 2 days. Because of the large quantity of fresh apples in the recipe, transfer to the fridge for an additional 2 days.
After thoroughly cooling, wrap the bread in plastic, followed by a layer of aluminum foil, or place it in a zipper freezer bag. Freeze for up to 2 months. Thaw in the fridge overnight to avoid excess condensation.

Has anyone made this by adding the cinnamon sugar ingredients to the dry batter ingredients before folding into the wet batter ingredients, rather than mixing them separately?
