- Spices: ground cinnamon, nutmeg, and cloves
- Egg: for egg wash
How to make an Apple Galette

In a medium bowl, combine the flour and salt. Using a pastry blender, cut in the butter until it is very crumbly. Add chilled water a few tablespoons at a time, mixing with a fork until the dough pulls together. Press the dough into a 5-inch circle. Wrap in plastic wrap and chill in the fridge.
After chilling the dough, peel, core, and slice the apples. Toss the apples in a bowl with the lemon juice, brown sugar, cinnamon, cloves, nutmeg, and cornstarch.
Gently roll the pie dough out with a rolling pin to a 12-inch circle on a lightly floured surface. Trim the rough edges with a pizza cutter, leaving a 2-inch border. Spoon the apples into the center of the pie crust. Bring up the edges, tuck it in, and fold it along the way.
Whisk together the egg with the water. Using a pastry brush, lightly coat the top and sides of the pastry dough with the egg wash. Bake for about 35-40 minutes or until the crust is golden brown.
Preparation Tips and Storage
- Plan, as the pie crust must chill for at least 2 hours. If you are constantly fighting a race against the clock, make it a day in advance and store it in the refrigerator.
- For best results, use parchment paper or silicone baking mats.
- Slice the apples about 1/4 inch thick, which is thin enough to cook through but still have structure and plenty of delicious apple flavor and texture.
- Please don’t skip the egg wash step, as it enhances the browning of the pie crust and makes for a spectacular presentation.
- Store the apple galette covered at room temperature for up to 2 days or covered in the fridge for up to 5 days.
Flavor Variations
- Top the warm galette with whipped cream, vanilla ice cream, or salted caramel.
- After baking, brush the top of the fruit with warm peach or apricot jam
- Add golden raisins, chopped dried apricots, or dried cherries.

If you don’t have the time to make a homemade pie crust, pick up a frozen one or try frozen puff pastry for a change of pace.
My go-to apples for this recipe are crisp, tart apples like Honeycrisp or Granny Smith. Other good choices are Jonagold, Braeburn, or Pink Lady (Cripps Pink). Mix all or any of these for more texture and flavor.
Reheat at reduced power in the microwave or reheat in the oven at 325 degrees for about 10 minutes.

Carefully move the pie crust to a baking sheet covered with parchment paper. Spoon the apples into the center of the pie crust and bring up the edges tucking it in and folding it along the way.
- Whisk together the egg and water. Using a pastry brush, lightly coat the top and sides of the pastry dough with the egg wash. Bake at 375 degrees for 35-40 minutes or until the crust is golden brown.
