Easy Baked Tortellini with Italian Sausage, onions, garlic, and cheese tortellini in marinara sauce, all smothered with Parmesan cheese and mozzarella cheese. This tasty casserole takes just minutes to get in the oven using fresh or frozen tortellini. Enjoy this easy dinner recipe by itself or with a fresh garden salad or Italian salad.
How to make Baked Tortellini
First, in a large pan over medium heat, brown the Italian sausage. When it is about halfway through the browning process, add the onions and cook until the sausage is no longer pink and the onions are soft. Reduce the heat to low and add the garlic and Italian seasoning. Cook for 1 minute while stirring constantly. Transfer the cooked mixture to a large casserole dish.
Add the marinara and cheese tortellini and stir to combine. Top with Parmesan Cheese and mozzarella cheese. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes or until the tortellini are tender, the dish is heated through, and the cheese is melted. Sprinkle with chopped fresh parsley and serve promptly
Recipe notes and helpful tips
- Use uncooked refrigerated cheese tortellini or uncooked frozen cheese tortellini. If using frozen tortellini, increase the covered baking time by 15 minutes.
- Ground beef or ground turkey can be substituted for the Italian sausage.
- Vegetables to consider adding to the skillet at the same time as the onions include spinach, mushrooms, bell pepper, or broccoli.
- Try different cheeses in this pasta dish like provolone, provel, Monterey Jack Cheese, cheddar, or Fontina.
- Use a 9×13-inch baking dish or a similar-sized dish.
- Garnish the dish with a tablespoon of chopped fresh parsley, fresh basil, or thyme.
- Store leftovers in an airtight container in the refrigerator for up 3 days. Reheat in the microwave at reduced power.
- To freeze first cool completely, then store in a heavy-duty freezer container for up to 2 months. Thaw in the fridge overnight and reheat in the microwave at reduced power.

Ingredients
- 1 lb.ground Italian sausage
- ½ medium yellow onion chopped
- 3 cloves garlic minced

- 24 ounces spaghetti sauce or tomato-based pasta sauce
- 20 ounces fresh or frozen cheese tortellini see notes for cooking time for frozen tortellini
- ⅓ cup freshly grated Parmesan cheese
- 2 cups shredded mozzarella
- Chopped fresh parsley
- Kosher salt and fresh ground black pepper to taste
