- Pizza dough: Grocery stores and bakeries sell ready-made pizza dough. You can also use refrigerated pizza crust in the can or make your homemade crust.
- Sausage: I use ground breakfast pork sausage like Jimmy Dean’s All Natural or Bob Evan’s All Natural.
- Cheese: I like provolone, cheddar, Monterey Jack, or Pepper Jack. I have used shredded blocks and pre-shredded cheese. Today’s pre-shredded cheeses are of better quality than in the past.
How to Make Breakfast Pizza

Pat your pizza dough out on a rimmed baking sheet and prebake. Beat the eggs and water together and cook in a large skillet over medium-low heat, scramble style.
Spoon the eggs onto the pizza dough and top the eggs with cheese, cooked bacon and sausage, bell peppers, and green onions. Bake for about 10 minutes or until the cheese is melted and the crust is cooked.

- Undercook your scrambled eggs by cooking on low and cutting off the heat early. Setting them enough to hold up on the pizza dough is the idea.
- Customize with various veggies like mushrooms, zucchini, jalapenos, or potatoes for more flavor.
- The broiler adds a nice touch that the average oven temperature sometimes will not produce. However, broilers are unpredictable, so stay close by and rotate the baking sheet several times.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave at reduced power or on a baking sheet in a single layer in the oven at 300 degrees for about 15 minutes or until warm.

Grocery stores and bakeries sell ready-made pizza dough. If your time is limited, and mine often is, this is a real blessing. You can also use refrigerated pizza crust in the can. Sheet biscuits or crescent rolls work well, too. Or try homemade pizza dough.
I do not recommend prepping this in advance. However, you can cook your bacon and sausage in advance and store them in an airtight container in the refrigerator until ready to assemble. You can also prep, bake the pizza, and then reheat. Reheat at 375 degrees for about 10 minutes.
You can freeze baked breakfast pizza for up to three months by wrapping it in two layers of plastic wrap followed by a layer of aluminum foil. Thaw in the fridge overnight and reheat in the microwave at reduced power.

Easy Breakfast Pizza Recipe
Ingredients
- pizza dough homemade or store bought
- 2 tablespoons olive oil
- 8 large eggs
- kosher salt
- fresh ground black pepper
- 2 tablespoons cool water
- 1 ½ tablespoons butter
- 1 ¼ cups shredded provolone
- 1 cup shredded Pepper Jack Cheese
- 6 slices bacon cooked crispy coarsely chopped
- ½ lb. bulk pork breakfast sausage browned
- ½ red pepper finely diced
- 3 green onions chopped
- salsa optional
Instructions
- Preheat oven to 425 degrees. Oil a 10×15-inch rimmed baking sheet.
- Work your pizza dough around the baking sheet by pressing gently with your fingers and hands. It may take a little time to work the pizza dough out as it tends to pull back from the sides. Once it seems to stay put, use your hands to tuck and push a little of the dough up against the side of the baking sheet creating a crust. Bake in the oven for 7-8 minutes.
- Beat the eggs and water together. Melt butter in a large nonstick skillet over medium heat. Add egg mixture and cook slowly, rotating them gently with a spatula. Be sure to slightly undercook the eggs as they are cooked again in the oven. Season the eggs with kosher salt and fresh ground black pepper Spoon the eggs onto the pizza dough.
- Top the eggs with both kinds of cheese, cooked bacon, cooked sausage, red pepper, and scallions.
- Place back in the oven for 10-12 minutes, turning on the broiler for the last 1-2 minutes. Rotate the baking sheet several times during the broiling process and stay close by, as I have always found broilers somewhat unpredictable.
