I think I have mentioned once or twice that I love soup!! I mean, honestly, who in world doesn’t? Isn’t it, after all, the greatest comfort food category? This Creamy Alfredo Lasagna Soup is the ultimate meal. It is chock full of sausage, mushrooms, spinach, and lasagna in a creamy Parmesan broth that is seasoned to perfection. Of soup and love …the first is best!
So if fall is in the air or there are six feet of snow on the ground, this soup is guaranteed to leave you feeling a little better. Perhaps you are just looking for a scrumptious warm meal like Mom, and Grandma used to make!! What did Mom use to say about soup? Worries go down better with soup! She was correct. This easy-to-fix soup can be whipped up really fast, and leftovers are delicious too.
So if a bowl of soup is your creme de la creme, then you must give this one a whirl. It is divine. In the famous words of Ludwig van Beethoven “Only the pure in heart can make a good soup.”

Creamy Alfredo Lasagna Soup
Ingredients
- 1/2 lb ground sausage
- 1 small onion chopped
- 8 ounces mushrooms sliced
- 2 cloves garlic minced
- 4 cups baby spinach
- 5 cups low sodium chicken broth
- 5 lasagna noodles broken
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 cup Parmesan grated
Instructions
- Brown ground sausage in a large saucepan over medium heat. Add onion and mushrooms; cook for 5-6 minutes over medium-low heat.
- Add garlic and spinach and cook for 1 minute while stirring.
- Add chicken broth and simmer for 5 minutes.
- Add broken lasagna noodles, oregano, and basil, and bring to a low boil.
- Cook for 10-12 minutes or until the noodles are tender.
- Meanwhile, in a skillet over medium-low heat, melt butter. Whisk in flour and continue cooking for 1 minute; whisking constantly. The butter/flour mixture should be bubbling.
- Slowly whisk in milk until the mixture is smooth and thickened, about 3-5 minutes.
- Turn off the heat and slowly whisk in Parmesan cheese. If the cheese is not melting, place it over very low heat and whisk constantly. When the Parmesan is fully melted, and the mixture is creamy, slowly add to the soup mixture whisking in.

This is delicious! I doubled the recipe and also added 1 red and 1 green pepper, both diced and sautéed with the onions and mushrooms. Also I just used the sausage grease to make the roux as opposed to adding butter. Thanks for the recipe!!

I plan on making this soup today it looks delicious but I want to double it so would that mean 10 cups of chicken broth as that would be 80 oz and also it would be eight cups of spinach that would be 64 oz of baby spinach is that correct ? It really sounds like a lot so I’m not sure.also I haven’t cooked with fresh baby spinach much don’t know how to measure it by the cup.

It would not be 64 ounces of spinach. There are about 10 cups in 1 pound of spinach. When I add spinach to a recipe I kind of go by an average handful is about 1 cup. Of course that would be an average sized woman.

I made this last night and it was absolutely DIVINE!
I used 4 cups of chicken broth instead of 5 because I like a heartier soup and didn’t put the spinach in until the end so it wouldn’t overcook. I also whisked the flour into the milk before pouring it into the melted butter because I always seem to get a lumpy sauce when trying to make a traditional roux.

Yes you can. It is not going to thicken it as much but it will still taste delicious.

I love this soup. I’ve made it a few times now exactly how the recipe calls for but today I’m making it in my crockpot and will add the cream, spinach and noodles at the end if the cooking time. Inalsoncooked my sausage before hand. So we will see how it turns out. I also am using Italian sausage and heavy cream instead of butter flour mixture because I had those things on hand. I hope it turns out. I’m looking forward to dinner tonight 😋

This was absolutely amazing! The only changes I made were to add one full pound of spicy Italian sausage instead of a half a pound. I also added one extra lasagna noodle and instead of basil I used Italian seasoning. Everything else was on point and perfect we will make this many, many more times in the future. I am not sure. Most soup recipes in crock pots call for the sausage/hamburger to be browned first. Let us if you try and what the results are.
