- 1 small onion chopped
- 8 ounces mushrooms sliced
- 2 cloves garlic minced
- 4 cups baby spinach
- 5 cups low sodium chicken broth
- 5 lasagna noodles broken
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 cup Parmesan grated
Instructions
- Brown ground sausage in a large saucepan over medium heat. Add onion and mushrooms; cook for 5-6 minutes over medium-low heat.
- Add garlic and spinach and cook for 1 minute while stirring.
- Add chicken broth and simmer for 5 minutes.
- Add broken lasagna noodles, oregano, and basil, and bring to a low boil.
- Cook for 10-12 minutes or until the noodles are tender.
- Meanwhile, in a skillet over medium-low heat, melt butter. Whisk in flour and continue cooking for 1 minute; whisking constantly. The butter/flour mixture should be bubbling.
- Slowly whisk in milk until the mixture is smooth and thickened, about 3-5 minutes.
- Turn off the heat and slowly whisk in Parmesan cheese. If the cheese is not melting, place it over very low heat and whisk constantly. When the Parmesan is fully melted, and the mixture is creamy, slowly add to the soup mixture whisking in.

This soup is amazing!!! I didn’t change a thing and it will definitely be one that is made often in our house. What a great way to end a snowy, cold day in Michigan!

Made this today and WOW! Due to pantry limitations I had to make a couple changes- Farfalle for lasagna noodles and Kale in place of spinach. Because I like things with a bit of heat I also added a pinch of red pepper flakes.
I posted on Instagram and tagged you. I’m not a big Insta user, so here’s hoping it did it right.

Thanks so much Vicki! So glad that you liked it and were able to adapt it to what you had on hand.
Kiki
I did this in my Instant Pot – for 6 min with a quick release at the end. Came out perfect.
I also substituted ground beef for the sausage, used a mix of kale & spinach, added a bit of red pepper for colour & doubled the chicken stock …bcs that’s what I had on hand + I wanted bigger quantity soup. Added a bit of salt & pepper to adjust the seasoning. Fantastic taste!

Thanks Kiki! So glad that you liked it and thanks for all the wonderful tips!

Sorry about the delay. I finally got that done. There are just not enough hours in the day for everything. You can find the information on the post.

This was the best soup ever. I used mild Italian sausage and one pound. I also made a cream Parmesan instead of roux. (I’m not good with roux-floury). Made it for friends-she was still eating when she asked for recipe. This is the best. Thank you
Beth Pierce
My pleasure Phyllis! So glad that you liked it!
