I think I have mentioned once or twice that I love soup!! I mean, honestly, who in world doesn’t? Isn’t it, after all, the greatest comfort food category? This Creamy Alfredo Lasagna Soup is the ultimate meal. It is chock full of sausage, mushrooms, spinach, and lasagna in a creamy Parmesan broth that is seasoned to perfection. Of soup and love …the first is best!
So if fall is in the air or there are six feet of snow on the ground, this soup is guaranteed to leave you feeling a little better. Perhaps you are just looking for a scrumptious warm meal like Mom, and Grandma used to make!! What did Mom use to say about soup? Worries go down better with soup! She was correct. This easy-to-fix soup can be whipped up really fast, and leftovers are delicious too.
So if a bowl of soup is your creme de la creme, then you must give this one a whirl. It is divine. In the famous words of Ludwig van Beethoven “Only the pure in heart can make a good soup.”

Creamy Alfredo Lasagna Soup
Ingredients
- 1/2 lb ground sausage
- 1 small onion chopped
- 8 ounces mushrooms sliced
- 2 cloves garlic minced
- 4 cups baby spinach
- 5 cups low sodium chicken broth
- 5 lasagna noodles broken
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 cup Parmesan grated
Instructions
- Brown ground sausage in a large saucepan over medium heat. Add onion and mushrooms; cook for 5-6 minutes over medium-low heat.
- Add garlic and spinach and cook for 1 minute while stirring.
- Add chicken broth and simmer for 5 minutes.
- Add broken lasagna noodles, oregano, and basil, and bring to a low boil.
- Cook for 10-12 minutes or until the noodles are tender.
- Meanwhile, in a skillet over medium-low heat, melt butter. Whisk in flour and continue cooking for 1 minute; whisking constantly. The butter/flour mixture should be bubbling.
- Slowly whisk in milk until the mixture is smooth and thickened, about 3-5 minutes.
- Turn off the heat and slowly whisk in Parmesan cheese. If the cheese is not melting, place it over very low heat and whisk constantly. When the Parmesan is fully melted, and the mixture is creamy, slowly add to the soup mixture whisking in.

I actually made this marvelous soup back in the fall and couldn’t eat the entire batch so I decided to “try” freezing it. I put the leftovers in a freezer bag and tucked it into my freezer. It’s been cold in Ohio this week so I decided I wanted to see if I was successful. I am very happy to report that my soup is as wonderful as it was when I put it in the freezer. I removed the soup, in the freezer bag, and placed in my refrigerator for the afternoon. It was not completely thawed so I removed it from the bag and placed in in an ovenproof deep bowl and placed it in a 250 degree oven for about 45 minutes. I took it out and stirred what I could, added a little heavy whipping cream and stirred again. I left it in the oven until fully thawed then I removed it from the oven, added more grated parmesan, and enough heavy whipping cream to blend. I placed it, covered, in the microwave and heated it threw. It is AMAZING and now I must decided when I’m making the next batch. Thank you for such a wonderful recipe!

I just made it for the first time this weekend, I used Farfalle.. It was perfect in my opinion, small enough to fit on a spoon, has the nooks and ruffles to grab onto the soup Which we loved. I used 1/2 a box, so maybe 8 oz. I did add another cup of broth. The second batch, I did 8 cups of broth, and 4tbs Butter and flour for the Roux and a little extra cheese…. Both batches were divine!!!

This was so yummy and super simple to turn keto friendly. I used cauliflower in place of noodles and instead of the flour/ butter/milk I sprinkled in a little xantham gum and then added heavy cream! Sooo good and great heated up for leftovers!

This soup is absolutely amazing and filling. I bought Italian sausage and pound of it. I used a excellent brand of lasagna noodles, Italian semolina. This is soup is a favorite and easy to make. I used Cremimi mushrooms. Delicious!
