I think I have mentioned once or twice that I love soup!! I mean, honestly, who in world doesn’t? Isn’t it, after all, the greatest comfort food category? This Creamy Alfredo Lasagna Soup is the ultimate meal. It is chock full of sausage, mushrooms, spinach, and lasagna in a creamy Parmesan broth that is seasoned to perfection. Of soup and love …the first is best!
So if fall is in the air or there are six feet of snow on the ground, this soup is guaranteed to leave you feeling a little better. Perhaps you are just looking for a scrumptious warm meal like Mom, and Grandma used to make!! What did Mom use to say about soup? Worries go down better with soup! She was correct. This easy-to-fix soup can be whipped up really fast, and leftovers are delicious too.
So if a bowl of soup is your creme de la creme, then you must give this one a whirl. It is divine. In the famous words of Ludwig van Beethoven “Only the pure in heart can make a good soup.”

Creamy Alfredo Lasagna Soup
Ingredients
- 1/2 lb ground sausage
- 1 small onion chopped
- 8 ounces mushrooms sliced
- 2 cloves garlic minced
- 4 cups baby spinach
- 5 cups low sodium chicken broth
- 5 lasagna noodles broken
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 cup Parmesan grated
Instructions
- Brown ground sausage in a large saucepan over medium heat. Add onion and mushrooms; cook for 5-6 minutes over medium-low heat.
- Add garlic and spinach and cook for 1 minute while stirring.
- Add chicken broth and simmer for 5 minutes.
- Add broken lasagna noodles, oregano, and basil, and bring to a low boil.
- Cook for 10-12 minutes or until the noodles are tender.
- Meanwhile, in a skillet over medium-low heat, melt butter. Whisk in flour and continue cooking for 1 minute; whisking constantly. The butter/flour mixture should be bubbling.
- Slowly whisk in milk until the mixture is smooth and thickened, about 3-5 minutes.
- Turn off the heat and slowly whisk in Parmesan cheese. If the cheese is not melting, place it over very low heat and whisk constantly. When the Parmesan is fully melted, and the mixture is creamy, slowly add to the soup mixture whisking in.

I made this tonight. It’s delicious. I did use almond milk and coconut milk instead of milk. Slight dairy issues. It would be especially good during the winter. I also used hearts of palm pasta due to gluten issues. Still super delish !

This is one of the BEST soups I’ve ever had. I stayed pretty close to the recipe, but I did make a couple changes based on what I had on hand. I used sliced baby Bella mushrooms, kale in place of spinach, fat-free half-and-half in place of milk, and the shredded fresh Parm that comes in a bag. Delish!

omg delicious. I don’t care for alfredo because it gets cold so quickly, but this soup is steamy hot and so good. I love mushrooms, not spinach or basil but it all works together beautifully. Will definitely share.

Just tried this soup recipe. Follow the instructions and you cant go wrong. The only things I would do differently would be to ncreased the sausage amount from 1/2 lb. to 1 lb., and if you dont like chunky mushrooms, chop them into small pieces instead of slices. Flavor is so good.

I’m not fan of soup and the only time I eat it is when I’m sick. My friend sent me this recipe and the next day I found myself at the grocery store buying the ingredients. This soup is amazing!! Besides adding the 1/2 ground sausage I also added one hot Italian beyond sausage and a few extra noodles. 😋

I used mild Italian sausage, it gives it some extra flavors. Added a few extra noodles and spinach, we love those. The broth for this soup is amazing!! So good and filling and even better as leftovers.
