Creamy Alfredo Lasagna Soup
Ingredients
- 1/2 lb ground sausage
- 1 small onion chopped
- 8 ounces mushrooms sliced
- 2 cloves garlic minced
- 4 cups baby spinach
- 5 cups low sodium chicken broth
- 5 lasagna noodles broken
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup milk
- 1 cup Parmesan grated
Instructions
- Brown ground sausage in a large saucepan over medium heat. Add onion and mushrooms; cook for 5-6 minutes over medium-low heat.
- Add garlic and spinach and cook for 1 minute while stirring.
- Add chicken broth and simmer for 5 minutes.
- Add broken lasagna noodles, oregano, and basil, and bring to a low boil.
- Cook for 10-12 minutes or until the noodles are tender.
- Meanwhile, in a skillet over medium-low heat, melt butter. Whisk in flour and continue cooking for 1 minute; whisking constantly. The butter/flour mixture should be bubbling.
- Slowly whisk in milk until the mixture is smooth and thickened, about 3-5 minutes.
- Turn off the heat and slowly whisk in Parmesan cheese. If the cheese is not melting, place it over very low heat and whisk constantly. When the Parmesan is fully melted, and the mixture is creamy, slowly add to the soup mixture whisking in.

I just made this today and it’s delicious. Only thing I modified was I added was a little bit of crushed red pepper flakes to give it a little heat. Besides that I followed the recipe exactly as written.
Beth Pierce
Thanks, Kim! So glad that you liked the soup.

Fantastic recipe, I made this tonight after my daughter in law sent it to me to try.
I used gnocchi instead of lasagna noodles, and rolled the Italian sweet sausage into mini meatballs.
Great flavor, definitely a keeper !!!

Thanks, Mark. What great ideas. I will have to try it.

In going to jump on the 5 star bandwagon. I used a full pound of Italian sausage and used gnocchi instead of lasagna. Extremely tasty! Will be definitely in my future rotation. Hubby loved it too

Great recipe, great soup. I’ve made this twice now and both times no leftover. Definitely a keeper and thanks for sharing.

Suggestions on alternatives for the flour? Would cheese of some type possibly work?
Beth Pierce
How about a cornstarch slurry?
Jules
I was maybe thinking Xantham Gum rather than cornstarch, but I decided to go with the flour to give the soup a try. I used three cheese tortellini instead of lasagna noodles, but otherwise followed the recipe and this was so amazing! I had to add a little extra chicken broth in the end but it was soooo good! Thank you!
Beth Pierce
The pleasure is all mine, Jules. So glad that you liked it!

Can you use fresh basil. If so how much
Beth Pierce
Yes, you can. Use about 1/2 tablespoon finely chopped at the end right before serving.
Sandy
This looks delicious and I hope to try it once the weather cools down a bit. I love mushrooms but my husband does not. Any suggestions for a substitute? Thanks.
Beth Pierce
Thanks Sandy! It is really hard to find a substitute for mushrooms. Zucchini would probably taste delicious in this.

I recommend using tofu. Cut Tofu into 1/2 in squares. Put into frying pan with butter and fry till golden brown. About 4-5 minutes. Delicious. He will never know.

Question – What amount of pasta (farfalle) should I use in place of the lasagna noodles? Ready to make it and no lasagna noodles in the house.
Beth Pierce
Sorry Karen! Somehow I missed this. I would add a little more than a cup.
