- Red onion: finely diced
- Garlic: fresh, of course
- Jalapeno: Wear gloves and do not touch your face when working with jalapenos. Wash up thoroughly after finishing.
- Cilantro: fresh is best
- Seasonings: salt and freshly ground black pepper
- Roma tomatoes: optional
How To Choose Ripe Avocados
For ripe, ready-to-eat avocados, look for dark green to nearly black skin. The flesh should yield slightly to gentle yet firm pressure but not feel mushy. A dark black mushy avocado is overripe. If you pop the stem off with your thumb, you should see a nice green spot, indicating a healthy avocado, but if you see a black moldy spot, the avocado is overripe.
How To Make Guacamole
Mash the avocados, lime juice, and lime zest with a potato masher or fork. Add the red onion, garlic, jalapeno, cilantro, and, if desired, tomato. Stir to combine. Season it with salt and pepper to taste.
If not serving shortly, spoon the guacamole into an airtight container and level it off with a spoon. Pour a thin layer of lime juice over the top. Cover the dish with a sealed lid and place it in the fridge. Before serving, pour off the lime juice and stir to combine.
