Add the carrots, butter, brown sugar, and water to a large skillet. Cover and cook over medium-low heat for about 10 minutes or until the carrots begin to soften. Remove the cover and cook over medium heat for 8-10 minutes or until the glaze thickens. Season with salt and pepper to taste and, if desired, a little bit of cinnamon and ground cayenne pepper. Sprinkle with chopped fresh parsley.
