My family loves this quick and easy hamburger stroganoff made without cream of mushroom soup. If I cook my egg noodles while I prepare the rest of the dish, I can have this easy ground beef stroganoff on the table in less than 30 minutes. As a bonus, it is made without any canned soups.

- Ground beef: use ground beef with a bit of fat. Fat gives the dish flavor. You can also substitute ground turkey, pork, or chicken.
- Butter: salted or unsalted. If using salted butter, cut down on any added salt.
- Mushrooms: Both white button mushrooms and cremini mushrooms work well in this recipe. Heck, you can use some of each for more flavor.
- Seasonings: dried thyme, fresh parsley, salt, and black pepper. Dill and mustard are other seasonings to try in moderation.
- Beef Broth: preferably low-sodium
- Sour cream: full-fat works best
How to Make Ground Beef Stroganoff
Brown the ground beef in a large skillet over medium heat. Halfway through the browning process, add the butter, onion, and mushrooms. Continue cooking until the beef cooks through and the mushrooms are brown.
Reduce the heat to low and add garlic, thyme and parsley. Cook for one minute while stirring. Sprinkle the beef mixture with flour and cook for 1-2 minutes, stirring to combine. Add the beef broth, Worcestershire sauce, and Dijon mustard, stirring to combine. Simmer over low heat for about ten minutes. Then, stir in the sour cream. Season with salt and freshly ground black pepper.
Serving Suggestions
Serve it over egg noodles, angel hair pasta, or garlic mashed potatoes. I like to serve it with a garden salad with Dutch oven bread or crusty baguettes with soft butter. My favorite side dishes are roasted parmesan asparagus and sauteed green beans.

- If you have excess grease after browning the ground beef, drain it before proceeding with the rest of the recipe.
- I like to use Amish egg noodles, but any egg noodle will work. You can also serve them over mashed potatoes, angel hair pasta, or rice.
- Wait until serving time to combine with the egg noodles, as the noodles tend to soak up too much of the gravy and get mushy.
Storage and Reheat
Leftovers can be stored in an airtight container in the fridge for up to 3 days. They can be reheated in a pan over medium-low heat or in the microwave at reduced power.

- 1 lb lean ground beef
