This sheet pan Italian Chicken is tender marinated chicken breasts and assorted veggies seasoned and roasted to golden perfection. It is a quick and easy dinner that the whole family enjoys! Serve this tasty dish with garlic knots and homemade lemonade.
Ingredients for Italian Chicken
- Chicken Breats – boneless, skinless chicken breasts pounded to about 1/2 inch thick
- Italian Dressing – use your favorite bottled Italian dressing. We love Zia’s.
- Fresh veggies – that roast well, like zucchini, potatoes, and tomatoes.
- Seasoning – Italian Seasoning and fresh herbs like thyme, rosemary, basil, and parsley
- Parmesan cheese – freshly grated, of course, for optimal flavor.
How to make Italian Chicken
- First, pound the chicken breasts and then marinate them in your favorite homemade or bottled Italian dressing. Let it marinate for about 30-60 minutes.
- Cut the zucchini into chunks, half the potatoes and tomatoes. Toss the zucchini and potatoes with olive oil and Italian seasoning.
- Cover a large baking sheet with parchment paper. Using tongs, remove the chicken breasts from the marinade, letting them drip for a minute back into the bowl. Place the chicken on the baking sheet. Discard the marinade.
- Arrange the vegetables around the chicken breasts on the baking sheet. Sprinkle the chicken and veggies with salt or seasoned salt and freshly ground black pepper. Bake for 20 minutes or until the chicken reaches an internal temperature of 165 degrees and the vegetables are tender.
Recipe Tips
- Use boneless, skinless chicken breasts and your favorite homemade or bottled Italian dressing.
- Cover the bowl while marinating and refrigerate if marinating longer than an hour. Discard used marinade.
- Use baby potatoes or cut regular potatoes into 1-inch chunks.
- I had some Campari tomatoes that I needed to use up, but you can use grape or cherry tomatoes. However, do not cut them in half.
- Other veggies that work well are green beans, bell peppers, broccoli, cauliflower, and yellow squash.
- Chicken is cooked through when it reaches an internal temperature of 165 degrees. Use an instant-read thermometer inserted in the thickest part of the chicken breast.
Storage and Reheat
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, first bring everything to room temperature. Then reheat in the microwave at reduced power or on a baking sheet loosely covered with aluminum foil in the oven at 350 degrees for about 10 minutes or until warmed.
