A delicious Salsa Chicken Recipe made easy in a slow cooker with just four simple ingredients. Use the tender chicken in burrito bowls, tacos, and quesadillas. Serve over Cilantro Rice with thin slices of red onion and lime wedges or in your favorite taco salad.
How to Make Salsa Chicken in the Crock Pot
Place the chicken breasts in a single layer in the bottom of a slow cooker. Sprinkle with taco seasoning and pour the salsa over the top. Cover with the lid and cook for 2-2 1/2 hours on high or 4-5 hours on low or until the chicken is very tender. Shred with two forks. Season with salt and freshly ground black pepper to taste.

- This recipe also works well with boneless, skinless chicken thighs. Just cook for the full 5-5 1/2 hours on low or until the meat shreds easily.
- Choose a tomato-based salsa that you have enjoyed before. I like this brand from Walmart. It works and tastes well in this recipe.
- Homemade Taco Seasoning is quick and easy to make, with so much flavor compared to those dry taco seasoning packets that have been sitting on the shelves for months.
- This shredded chicken is also delicious, topped with cheddar cheese, sour cream, black beans, and corn with a spritz of lime juice. Serve it as a bowl, over tortilla chips as nachos, or wrapped up in a flour tortilla as a burrito.
Storage and Reheat
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop over low heat or in the microwave at reduced power.
To freeze, first, cool completely. Then freeze for up to 3 months in a freezer bag or freezer-safe container. Thaw in the fridge overnight and reheat on the stovetop over low heat or in the microwave at reduced power.
