How to Make Waffle Cookies
Start by whisking the flour, baking powder, and salt in a medium bowl. Then, in a stand mixer with the paddle attachment or an electric hand-held mixer on medium speed, cream the butter, sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing just until incorporated. Then add the vanilla and mix until incorporated.
Mix the dry ingredients into the wet ingredients in several increments, scraping down the bowl and beaters as needed. Preheat the waffle iron and lightly brush it with vegetable oil.
