Combine the spices and reserve some of the seasoning mix. Sprinkle the remaining on chicken. Drizzle with olive oil and rub it in. Meanwhile, clean and slice the mushrooms.

Cook the chicken on both sides in olive oil and some butter. Plate the chicken and cover.

Melt some more butter in the skillet. Add the mushrooms and cook, followed by cajun seasoning and garlic. Plate the mushrooms and garlic.

Whisk in the flour and cook, followed by the milk. Simmer and season with salt and pepper. Add the mushrooms, garlic, and chicken back to the skillet, and simmer. Garnish before serving.
