Loaded Cauliflower

Keto-friendly loaded Cauliflower Casserole combines steamed cauliflower, cream cheese, sour cream, sharp cheddar, Monterey Jack, bacon, and chives.

Steam or boil the cauliflower, then drain.

Combine the cream cheese, sour cream, cheddar cheese, Monterey Jack, garlic powder, and onion powder. Stir in the cauliflower, some bacon, and chives. Season with kosher salt and black pepper.

Spoon into a casserole dish and top with the remaining bacon. Bake and serve.

What a fantastic take on cheesy cauliflower! We loved it. It was so filling, yummy, and fun – great way to eat veggies. We will make this again!
