This easy Pineapple Upside Down Cake bakes up perfectly every time with sweet caramelized pineapple and maraschino cherries on a moist and buttery cake with slightly crispy edges from the cast iron skillet.

Whisk together the dry ingredients and set aside.

Cream the butter and sugar together. Add the eggs one at a time and mix. Mix in the vanilla extract next. Then, add the dry mixture in intervals, alternating with the pineapple juice and the milk. Mix.

Meanwhile, melt butter in a cast iron skillet. Sprinkle with brown sugar. Top with pineapple slices and fill in the spaces with maraschino cherries.

Pour the cake batter over the top and bake. Let cool before serving.
