This time of the year gets so darn busy. The days fly by at a hundred miles a minute. I have begun to bake Christmas goodies and freeze them. These white chocolate peanut holiday Haystack Cookies are so beautiful, easy, and delicious, and they freeze well. Is your available time starting to run short? Well, these little treasures only take a few minutes, and aren’t they pretty?
I can not believe that Christmas is yet again right around the corner. So much to do and so little time. I feel like from Halloween on; it is RUN, RUDOLPH RUN!! Tons of fun but lots to do!! These little treasures can literally be prepared from start to finish in less than ten minutes. There are only four ingredients, and the cost is minimal as well.
How to freeze Haystack Cookies
These cookies can be prepared ahead of time and frozen. Once the cookies are completely set, pack them in double Ziploc freezer bags and place them in sturdy glad-ware containers. When thawing, take them out of the containers frozen and place them on serving trays or platters uncovered. Once they come to room temperature, cover them with plastic wrap or store them in airtight containers.
How to make no-bake Haystack Cookies
Melt the chocolate in a large microwavable bowl according to bag instructions. Add peanuts and chow mein noodles. Drop by rounded spoonfuls onto wax paper. Shake on sprinkles and allow to cool for several hours before removing them from the wax paper.
How to decorate Haystack Cookies for other holidays
They sell sprinkles for virtually every holiday and occasion. I have picked them up at Michaels, Hobby Lobby, and my local grocery stores. Just change out the sprinkles to fit the holiday.

- Memorial Day and 4th of July – red, white, and blue
- Halloween – orange, black and white

Ingredients
- 2 cups white chocolate chips I use Ghirardelli
- 1 cup salted peanuts
- 3-4 cups La Choy chow mein noodles
- Christmas sprinkles

How long can I freeze the cookies and bars? And is there anything that should not be frozen??

A couple of months is about as far as I go packaging them as airtight as possible. Package them in separate bags or freezer containers so they do pick up the taste of the different cookies. The only thing that I am aware of not freezing well would be meringues.

Yes I think so. Please do not put them in the Tupperware when they are warm because of condensation.

Good afternoon from Missouri!! So sorry about the delay. The car needed to go in and the kids are working on their Halloween costumes for Trunk or Treat. I can not think of a cookie or bar cookie that does not freeze well….with the possible exception of meringues. All my mini cheesecakes freeze very well. You must take all the frozen goodies out of their packaging while they are still frozen. They should not be covered at all while defrosting. It is the condensation in the packaging that causes problems. Once fully defrosted you can cover or return to dried out glad-ware. I would love to write a cookbook but life is a very busy adventure …perhaps in a couple of years. So glad that you love my recipes. It makes my day to hear from sweet people like yourself.
