Ingredients

  • 2 cups low-sodium chicken broth
  • 1 can condensed cream of chicken soup
  • 1 teaspoon Italian seasoning
  • ½ teaspoon seasoned salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon freshly ground black pepper
  • cups long grain white rice
  • 1 cup frozen peas
  • lbs boneless skinless chicken breasts cut into bite-size pieces
  • 2 cups shredded sharp cheddar cheese

Instructions

  • Preheat the oven to 375 degrees. Grease or spray a 9x13-inch casserole dish with nonstick cooking spray.
  • Whisk the chicken broth, condensed cream of chicken soup, Italian seasoning, seasoned salt, garlic powder, onion powder, and freshly ground black pepper in the dish.
  • Add the rice, peas, and cubed chicken and stir to combine. Cover the casserole tightly with aluminum foil and bake for 50 minutes or until the rice is tender.
  • Sprinkle the top with cheddar cheese and put it back in the oven uncovered for 10 minutes or until the cheese melts. Put the aluminum foil back over the casserole loosely and let it rest for 10 minutes.

Notes

  • Grease or spray the casserole dish with nonstick cooking spray for easy cleanup.
  • Add fresh or frozen broccoli or cauliflower for fiber, texture, and color.
  • To turn up the spice, add a little ground cayenne pepper, replace the Italian seasoning with Cajun seasoning, or substitute Pepper Jack cheese for cheddar cheese.
