Ingredients
2cupslow-sodium chicken broth
1cancondensed cream of chicken soup
1teaspoonItalian seasoning
½teaspoonseasoned salt
½teaspoongarlic powder
½teaspoononion powder
¼teaspoonfreshly ground black pepper
1¼cupslong grain white rice
1cup frozen peas
1½lbsboneless skinless chicken breasts cut into bite-size pieces
2cupsshredded sharp cheddar cheese
Instructions
Preheat the oven to 375 degrees. Grease or spray a 9x13-inch casserole dish with nonstick cooking spray.
Whisk the chicken broth, condensed cream of chicken soup, Italian seasoning, seasoned salt, garlic powder, onion powder, and freshly ground black pepper in the dish.
Add the rice, peas, and cubed chicken and stir to combine. Cover the casserole tightly with aluminum foil and bake for 50 minutes or until the rice is tender.
Sprinkle the top with cheddar cheese and put it back in the oven uncovered for 10 minutes or until the cheese melts. Put the aluminum foil back over the casserole loosely and let it rest for 10 minutes.
Notes
Grease or spray the casserole dish with nonstick cooking spray for easy cleanup.
Add fresh or frozen broccoli or cauliflower for fiber, texture, and color.
To turn up the spice, add a little ground cayenne pepper, replace the Italian seasoning with Cajun seasoning, or substitute Pepper Jack cheese for cheddar cheese.
